| Ingredients: | 1 chopped onion
1 clove of garlic crushed with a teaspoon of salt
1 large tin of tomatoes
2 slices of lemon
2 tablespoons of vinegar
2 tablespoons of ketchup, or HP sauce or tomato puree
1 tablespoon of Worcester sauce
1 large tablespoon of brown sugar
Bouquet of herbs (i.e. thyme, parsley) and 2 bay leaves
Generous tablespoon of mango chutney
Fruit juice or water

| Method: | Fry the onion and garlic in a tablespoon of olive oil for a few minutes until soft, then add the other ingredients. Simmer for about 20 minutes, diluting with fruit juice or water if needed. Take out the bay leaves and sieve or blend in a food processor
