Allow the meat to come to room temperature; this will result in a more even cooking. Massage the joint with a little olive oil or beef fat and season with salt and freshly ground black pepper. For large joint of 2kg + put in a roasting tin and place in a hot oven 220 c/ gas 7 for 20mins and then turn the oven down to 150c/ gas mark 2 and continue cooking for 10mins per 500g. For a smaller joint reduce the time at the higher heat to 10mins.Allow to rest for at least 30mins in a warm place before serving. Topside is also excellent for pot roasts and braising.
