Cucumber and Mint Raita


  • A quarter (approx) of a cucumber, peeled and coarsely grated
  • 150g or small pot of natural yoghurt
  • 1 spring onion finely chopped
  • Small or half a clove of garlic, crushed
  • Salt and black pepper.



  1. Put the yoghurt in a bowl, beat lightly with a fork and stir in the other ingredients Chill .in the fridge until ready to serve.
